Creole Shrimp-Stuffed Poblano Peppers


This was so yummy and so easy to make!
We stir fried shrimp and white onions with some diced garlic and a touch of creole sauce.
Add that to a mixing bowl and mix with cooked brown rice, raw corn, a diced fresh jalepeno, several chopped tomatoes and some shredded cheddar cheese.

Stuff split poblano peppers with the mixture, top with a little more cheese, and bake until peppers are tender, about 20 minutes.
